Inevitable contamination

Within 2-12 hours of cleaning or installing a brand new draught system, biologics begin to colonize and deposits begin to build up on the beer contact surfaces. As beer leaves the sterile environment of the keg, it enters the non-sterile environment of the dispensing system. As bacteria enter the draught system, they feed on beer and attach to the walls of draught lines. Oxygen entering the system through the faucet and coupler nourishes these flavor-changing microbes and makes them grow faster.
